Breakfast Pizza
What kid doesn’t love pizzas in mini form for lunch?!

Ingredients
- 1 pizza base
- 3 tbsp your favourite pizza sauce
- 1.5 cups pizza cheese grated
- ½ cup leftover cooked potato sliced
- 2 Hellers Classic Precooked Sausages sliced
- 4 eggs
- ¼ tsp dried oregano
- Olive oil
- Sea salt and cracked pepper
Method
- Preheat a hot oven
- Spread the pizza sauce evenly over the pizza base leaving an inch around the edge without sauce
- Sprinkle the base evenly with half the cheese and top with potato and sausage slices. Leave 4 small gaps to crack each egg into the space don’t worry if the white runs it is supposed to.
- Sprinkle over with remaining cheese and oregano.
- Drizzle the pizza with a little olive oil and season well.
- Cook the pizza in the hot oven for 10-15 mins until golden and the egg yolks are just starting to set.
- Slice the pizza, sprinkle with fresh herbs, and serve immediately.
